Location: Valpolicella is a famous wine region in the Italian province of Verona, in the north-east of the country. The region is primarily known for its diverse and characteristic red wines. The name "Valpolicella" is probably derived from "Vallis Polis Cellae", which means "valley of the many wine cellars".

Geography and climate
Valpolicella is located in the hilly areas northwest of Verona and covers an area of around 240 square kilometers. The region is characterized by a mild climate, which is influenced by the nearby Alps and Lake Garda. These climatic conditions are ideal for viticulture, as they provide sufficient sunshine and protection from extreme weather conditions.

Wine production
Valpolicella wines are mainly made from indigenous grape varieties such as Corvina, Rondinella and Molinara. There are different categories of Valpolicella wines, which differ in style and production methods:

Valpolicella Classico: this is the simplest and lightest wine of the region, usually drunk young. It is characterized by fruity aromas of cherries and a pleasant freshness.

Valpolicella Superiore: This wine must mature for at least one year and has a higher alcohol content than the Classico. It offers more structure and complexity.

Ripasso della Valpolicella: In this technique, the young Valpolicella wine is fermented on the skins of the Amarone, which gives it more body, depth and complexity.

Amarone della Valpolicella: Amarone is the region's most prestigious wine. It is made from dried grapes, which gives it a high concentration and intense flavor. The wine has strong aromas of dark fruit, chocolate and spices and can age for decades.

Recioto della Valpolicella: This is a sweet dessert wine that is also made from dried grapes. It is rich and sweet, with aromas of raisins, cherries and plums.

The history
Viticulture in Valpolicella has a long tradition dating back to Roman times. The Romans already appreciated the wines of this region and promoted their cultivation. Over the centuries, the winegrowers of Valpolicella have refined their techniques and developed a rich winemaking tradition that continues to this day.

Culinary accompaniment
Valpolicella wines are extremely versatile and go well with a wide variety of dishes. The light Valpolicella Classico is ideal for pasta dishes, pizza and grilled vegetables. Valpolicella Superiore and Ripasso are excellent with meat dishes, game and mature cheeses. Amarone is an excellent accompaniment to hearty dishes such as roast beef, game and mature Parmesan cheese. Recioto della Valpolicella goes perfectly with desserts, especially chocolate desserts and cakes.

Structure of the wine cellar:
The wine cellar is fully equipped and offers state-of-the-art facilities:
Pressing plant: state-of-the-art plant for pressing the grapes.
Destemming and soft pressing: Gentle processes to preserve the quality of the fruit.
Drying room: Traditional and natural drying of the grapes, supplemented by control facilities.
Fermentation and ageing tanks: Specialized tanks for the fermentation and ageing of wines.
Barrique cellar: Preferably equipped with 5hl tonneaux as well as large 33hl and 60hl barrels.
Labeling plant and warehouses: State-of-the-art equipment for labeling and storing the wines.
In order to improve the quality and stability of the bottled wines, we have opted for on-site bottling using a certified truck. This temporary solution will be used until a bottling plant optimally suited to the company's needs is acquired.
